TW2 isn’t a long game and it will give you a much better handle on things when the game references certain characters, events, etc. But, if you decide to skip the first one (understandable since it is quite dated), read a synopsis and then play TW2 for sure. But the story is extraordinary, and a must play, must experience ritual for all Witcher fans.
Yes, the graphics is dated, and the fights are a bit slow and methodical. Trust me, playing Witcher 1 was worthwhile. It might just be me having played a ton of Witcher 2 a long while ago on 360, including getting all the achievements for it, but it just seems like Witcher 3 is significantly easier by comparison. It can be very hard on your first playthrough, but after that even the harder difficulties are pretty easy. It can be hard if you don’t understand the enemies you are fighting at that moment, but if you understand how to approach the fight with the right bombs/spells/potions it is very manageable. He’s made into a blank slate for players unfamiliar with the universe. This isn’t to say they’re not good games, but in order to start anew with its own canon separate from the books, CD Projekt Red gave Geralt amnesia at the beginning of the first game.
